You getting the theme here? We like chicken and rice. I'm not going to give measurements in this recipe because I literally threw random stuff from my freezer into this one-pot meal.
2 cups cooked rice
1 lb chicken breast, diced
1 block of cream cheese
1 TBSP of italian seasoning
As many vegetables as you want! (I used spinach, corn and broccoli.)
Pinch of salt
Dice and cook chicken breast in a skillet on medium-high heat. Once that's done, add any fresh vegetables you want to soften and cook until done. Then add the block of cream cheese, the italian seasoning, and salt. When the cream cheese is melted, add a bunch of frozen vegetables from the freezer. Reduce the heat, cover, and cook until vegetables are heated.
My toddler ate this, so, it's pretty good.
